Heat a large pot over medium heat. Add the apples, pears, and water; cook, stirring occasionally, until the two thirds of the fruits are broken down and a sweet scent is emitted, about 10 to 12 minutes. (Lower the heat if they stick to the pot too much).
Add the ginger, orange juice, and sugar, stirring to combine. Cook until almost all of the apples and pears are broken down, 10 minutes more.
Let cool and serve warm or at room temperature, or store for later.
